The 2021 Beckstoffer To Kalon Cabernet Sauvignon from Tor is flat-out stunning in this vintage. It opens to incredibly captivating aromatics of ripe dark currants and blackberries that are joined by dustings of graphite, crushed gravel, violets, iron and a slight touch of mocha that all take shape as this unwinds in the glass. The palate is just as compelling, full-bodied, concentrated and structured with big tannins that are beautifully polished and well-integrated into its sweet, concentrated core. The mouthfeel is plush and layered with delicious flavors of ripe blackberries, black cherries, spices floral and graphite that continue to build as it seamlessly enters the incredibly long, yet graceful finish. The 2021 Cabernet Sauvignon is a remarkably pure expression of the To Kalon Vineyard’s pedigree and the immaculate winemaking that has gone into producing this special wine. (JD)

The classic rendition of Beckstoffer To Kalon Vineyard Cabernet Sauvignon from TOR Wines comes entirely from the F Block planted on the Oakville site. It's the block furthest west near the more undulating foothills of the Mayacamas. Aged 18 months in French oak. It is super fragrant, with complex aromas that are so intriguing you could just nose the glass for hours. Easily one of the darkest-fruited wines of TOR's 2021 lineup, leading with black cherry, blackberry, and excellent toasty cedarwood laced with brown baking spices, vanilla bean, and cocoa nib aromatics. All of that aromatic character shows on the medium-bodied palate, with a purity of ripe fruit framed by crisp, finely-tuned tannins and a lively, measurable thread of volcanic, red rock minerality. Long and laser-focused, with a firm backbone of racy acidity. (JC)

There are three releases from the To Kalon Vineyard in Oakville, and the 2021 Cabernet Sauvignon Beckstoffer To Kalon FnA comes from the F and A blocks. It's a more elegant, round, open-knit beauty displaying perfumed red and black fruits as well as some classic To Kalon floral and incense nuances. It still brings ample depth and richness, has velvety tannins, full-bodied richness, and a layered, seamless mouthfeel. It should keep for 15-20 years and age gracefully on its overall balance.
