This has a focused bouquet with lovely cranberry and wild strawberry fruit, very harmonious, and that oak plays a background role, allowing the terroir to show through. The palate is medium-bodied with crunchy red fruit and a little more depth and flesh than the Bignon, persistent and sapid on the finish, urging you to take another sip.\u003cbr\u003e\u003cbr\u003e\u003cem\u003eSince his acquisition of Didier Montchovet's eponymous domaine in 2019, Boris Champy is fast establishing himself as the reference point for the Hautes-Côtes de Beaune, showing just what these cooler, later-ripening, higher-altitude sites are capable of. Long farming biodynamically, with holdings in the commune of Nantoux (one of the most promising sectors of the Hautes-Côtes, as evidenced by investments here from the likes of Domaine Leflaive and Vincent Dancer), Champy cultivates his soils mechanically, with a green harvest and picks by hand. In the winery, reds often see some whole bunch fermentation, followed by basket pressing and élevage in carefully chosen barrels. In 2021, some of the production was declassified to produce Crémant de Bourgogne, leaving the best, ripest fruit for the still cuvées.\u003c\/em\u003e\u003cbr\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cbr\u003e\u003cem\u003eChampy’s ascent has been rapid since establishing his namesake domaine in the picturesque village of Nantoux, about a 5-minute drive from Pommard. Champy might not have a roster of gleaming Grand Crus to his name, but he has an uncompromising approach to viticulture. He takes modestly sited vineyards to such a high level that you begin doubting the validity of Burgundy’s hierarchy. Though his pair of Beaune Premier Crus might be the highest quality, the “soul” of his range, I feel, lies in his various Bourgogne Hautes-Côtes de Beaune, which utilize whole bunches, 100% in some cases. Some cuvées differ between pneumatic and vertical press wines, with tangible differences. If man is five, the devil is six, and God seven, I don’t know what that makes Champy.
