Édouard and Eleni Vocoret make some of the most exciting new-wave Chablis around — single parcels, wild yeasts, no new oak, minimal sulfur — and this cuvée comes from the Chatains sector within Vaillons, a stony, south–southeast slope of thin clay over Kimmeridgian limestone that emphasizes tension and salinity. The Chardonnay is hand-harvested, gently pressed, and fermented with native yeasts. Élevage runs on fine lees in stainless steel with a small portion in seasoned barrels and no new oak to preserve precision. The 2023 is taut and mineral, layering citrus and green apple with oyster-shell snap and a long, chalk-lined finish.
