Our first release of Blanc de Noir is made entirely from Pinot Noir that grows in a 38-year-old Dijon clone Pinot Noir block perched on a 1,000-foot cliff above the Columbia River.  This wine is ridiculous.  Each time we put our nose to the component pieces prior to assembly into bottle, and then during its “elevage”, we chuckled and shook our heads in disbelief at the crazy aromas that seem to capture most forms of cherry blossom and cherry known to man, and which are then backed by the most luxurious texture, brimming with both a mysterious dark charm, and elegant energy.  …and you can pretty much eat whatever you want with this - honestly, it may be a bit difficult to focus on the food…
