- Méthode Traditionnelle is a traditional method of producing sparkling wine and is a lab
or-intensive process whereby the wine undergoes a secondary fermentation inside the bottle, creating bubbles.
- Grapes used for this wine are farmed and harvested from the area of Tonnerre, which is close to Chablis. The terroir is clay-limestone on Kimmeridgian soil.
Varietal Composition: Chardonnay
Elaboration: Machine Harvest. Pneumatic press. Thermo-regulated vats 7C° Settling Stainless Steel tanks. According to Méthode traditionnelle. Fermentation between 18° and 20°. Second fermentation in bottle. Ageing on lees a minimum of 3 years. Dosage: 5g/liter.
Tasting Notes: It has a fine texture and a pleasant freshness. A fine froth marked by flowery notes and almond hints to the nose, in the mouth it stands out by the way the flavor remains for a long time and by the fresh ending enhanced by a remarkable structure in which can be found notes of lemon and grapefruit.
