Sonja + Greg’s Cider Factory Picpoul Blanc Cider
From the start we were adamant - no secrets at the factory! First and foremost, in terms of scale we are hardly a factory, though we are a labor of love. We hand bottle and bottle condition each bottle, set the bottles on their sides to undergo secondary fermentation to create the lovely magical bubbles inside. We don’t disgorge to remove the hazy love at the bottom of each bottle. If you like it hazy, shake it up. If you like it neat, set the bottle upright in the refrigerator or ice chest and boom, just like that, give it 24 hours and it’s prim as a peony.
Picpoul Blanc comes from a new addition to our valley, the stunning Nolan Ranch on Alisos Canyon road, part of the new Alisos Canyon AVA. The cider is from Gala apples organically farmed at Cuyama Orchards.
Totally dry, with just the right amount of effervescence, just like delicious vinous cider should be. In our case, it’s more vinous than cider, though don’t be fooled, those Gala’s pack an incredible punch: 2/3 Picpoul Blanc and 1/3 Gala cider.
